Blue Cheese Spinach Ball

Blue cheese can be intimidating. This recipe adds a healthy twist and additional crunchiness for balance! Spice up your charcuterie board with this bold addition.

INGREDIENTS

  • 1 package (10 oz) chopped frozen spinach
  • 2 packages (8 oz each) cream cheese, softened
  • 6 ounces blue cheese, crumbled
  • 1 clove garlic, finely crushed
  • ½ cup roasted and salted almonds
  • Toast rounds, crackers or vegetables

Thaw spinach and drain well (squeeze out excess moisture). Roughly chop almonds

Add softened cream cheese, crumbled blue cheese, finely crushed garlic and beat until combined.

Cover and refrigerate for 4 hours or overnight.

Once cheese is firm enough, wash your hands and shape it into a ball. Roll the ball in the chopped almonds.

Serve with toast rounds, crackers or vegetables.

Note:

This recipe may be prepared 1-2 weeks ahead. Remove from fridge 30 minutes before serving to allow the cheese ball to reach room temperature.
