To make the biscuits — Add the flour in a medium sized bowl. Using a grater, grate the butter over the flour, stirring to distribute evenly. Create a well in the center of the ingredients. Pour the milk in the well and stir, until the dough comes together, usually about 30 seconds.
Preheat oven to 450°F. Grease or line baking sheet with parchment paper. Use a spoon or ice cream scoop to scoop batter onto the baking sheet. Bake for 13-15 minutes, until biscuits are golden brown and slightly puffy.
For the the gravy — In a skillet over medium heat, add olive oil. Heat until shimmering. Add onions and sauté for about 5 minutes, until translucent. Add ground sausage and seasoning until browned. Add the butter, until melted. Add flour and cook for an additional 1-2 minutes, stirring frequently.
Gradually add stock and milk alternately, stirring constantly, and bring to a boil. The gravy should thicken after about 5 minutes. Reduce heat and simmer for about 2 minutes. Taste, and adjust seasoning as desired.
Serve while hot and enjoy!
