INGREDIENTS

  • 1 tbsp high heat cooking oil
  • 1/4 yellow onion, diced
  • 1/2 small zucchini, halved and sliced
  • 1 clove garlic, minced
  • 1 small tomato, diced
  • 1 cup loosely packed spinach, sliced into ribbons
  • 1 tbsp feta or shredded parmesan
  • 2 omega-3 eggs
  • salt and pepper, to taste

Directions:

  1. Heat oil in a small skillet over medium-high heat. Add onion and zucchini, stir until tender, about 3 minutes.
  2. Add garlic, stir for 2 minutes
  3. Add tomato, spinach, and salt and pepper to taste. Stir until spinach is wilted and tomato liquid is reduced to a thicker sauce-like consistency.
  4. Transfer vegetables from skillet to plate, top with cheese, and cover plate to keep warm.
  5. Using the same greased skillet, cook eggs your favorite way (over easy, sunny side up, scrambled, etc.), and serve alongside vegetable sauté.
