Yields 20 cookies
Preheat oven to 350°F.
In a bowl mix the vegetable and olive oils, orange juice, orange zest, sugar, cinnamon, clove and nutmeg with a spoon until well blended and set aside.
In a separate bowl sift 1/2 cup of all purpose flour and add baking soda, baking powder and salt. Slowly blend into the oil mixture. Add the farina or semolina flour and the remaining all purpose flour, 1 cup at a time until a soft oily dough is formed.
Roll the dough into small round balls using about 2 Tbsp of dough for each cookie, and place each on the cookie sheet. Push each dough ball down lightly with a fork. Bake for about 30 minutes and then remove from the oven to let cool.
While the melomakarona cookies are cooling, in a pot on low heat, warm 1 cup of water, 1 1/2 cup sugar, 1 1/2 cup honey, 1 cinnamon stick and the rind of an orange. Stir on low for approximately 8 minutes. Pour the hot syrup on the cooled cookies and let soak thoroughly.
