Spirited Apricot Brie

Add a little spirit to your brie with this France inspired Spirited Apricot Brie dessert!

INGREDIENTS

  • 1/3 cup apricot jam
  • 1 tsp orange peel, grated
  • 1 tbsp Cointreau or Grand Mariner (Non-Alcoholic: 1 tsp red win vinegar)
  • 1 tsp fresh lemon juice
  • 8 oz brie wheel
  • 1-2 tbsp slivered almonds

Remove brie wheel from fridge to warm up. In a small pot over medium heat, stir jam, grated orange peel, Cointreau and lemon juice. Note: You can substitute Cointreau or Grand Marnier with 1 tsp of red wine vinegar as a non-alcoholic option. Simmer for 4-6 minutes to thicken. Remove from heat.

To serve, place brie on a microwaveable serving dish, top with jam. Microwave for 30-45 seconds, in 15 second intervals to warm the center and soften the rim. Using a brie wheel is ideal, so the cheese does not entirely melt. After each 15 second interval, touch the brie on the rim and in the center to make sure it’s warm. Sprinkle almonds on top and serve with bread or crackers.

Consider doubling the ingredients for the apricot topping to brighten up grilled veggies, salmon, toast, ice cream or yogurt.
