Whipped Brie Dip

This whipped brie dip is an irresistibly creamy, elegant appetizer. Light and airy brie is blended until smooth, then topped with buttery sautéed herbs and garlic for a rich, savory touch.   • 16 oz wheel of brie cheese 
  • 2 tbs butter 
  • 3 tbs chopped fresh herbs (rosemary, thyme, parsley)  
  • 4 cloves garlic, chopped
  • Honey or agave

Directions:

  1. Place the wheel of brie in the freezer for 30–60 minutes to make removing the rind easier. Slice off the rind from the flat sides first, then trim around the edges. Cube the cheese and allow it to come to room temperature for 30–45 minutes.
  2. Whip the cheese in a food processor on high for a few minutes. Initially, the cheese will form a ball; periodically scrape down the sides and break up the ball until the texture is smooth. Spread the whipped cheese onto a serving plate or transfer it to a bowl.
  3. Melt the butter in a small pan over medium heat. Once melted, sauté the chopped herbs and garlic for 1–2 minutes, just until the herbs soften and the garlic begins to brown. Remove the pan from the heat.
  4. Pour the herb and garlic mixture over the whipped cheese. Drizzle with honey or agave for added sweetness.
