Kansas City pulled pork mac and cheese

INGREDIENTS

  • 4 pound boneless pork shoulder, fat trimmed
  • 1 yellow onion, sliced
  • 1 can ginger ale
  • 2 cups Kansas City style BBQ sauce
  • 16 slices of Texas Toast
  • 1 pound elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups whole milk
  • 4 cups shredded cheddar cheese

Directions:

In a slow cooker add pork on yellow onion add ginger ale and cook on low for 5 hours

Pull pork from slow cooker and shred with two forks

Dump juice from the slow cooker, return pork and pour on that Kansas City barbeque sauce

Boil elbow macaroni for 9 minutes

Melt butter and add flour whisk until smooth in a skillet

Whisk in milk and slowly stir in cheese for the sauce

Place mac and cheese and pulled pork on the toasted bread, maybe add another slice of cheddar, why not?
