INGREDIENTS

  • 1 cup Swiss cheese, shredded
  • 1 1/4 cup mixed cheeses, shredded
  • 1/3 cup cream cheese
  • 2 cloves garlic, peeled
  • 1/3 cup dry white wine
  • 1/2 - 1 tsp fresh thyme leaves

Translating to “strong (fort) cheese (fromage)”, this clever way to use up bits and nubs of cheese make for a quick and tasty appetizer. Even better, it’s flexible as a dip, topping, stuffing, bagel schmear, sandwich spread or cheese sauce base for pasta or pizza.

Add Swiss cheese, your choice of shredded mixed cheeses, cream cheese, garlic and wine to a food processor or high-power blender. Process until smooth. If too thick, blend in additional soft cheese or a teaspoon of milk at a time. Scoop into a serving bowl and stir in thyme, leaving some for garnish. More delicious additions to stir in, include chopped green olives, sun-dried tomatoes, fresh herbs, spices or more garlic!

If removing from the refrigerator, let it warm up some for best flavors. For an apéritif or happy hour nibble, serve with crackers or crudités (raw veggies).

Covered in the refrigerator, keep it for 1 week. It can be frozen for a couple months when well wrapped.
