Preheat oven to 350°F.
Crumble the feta so that there are no big chunks, and in a mixing bowl, add the ricotta cheese, cream cheese, and crumbled feta. Add the eggs and mix with your hands until all the cheeses are well combined.
Melt the butter and with a pastry brush butter the baking sheet (14x10 pan or ½ cookie sheet).
Lay your first sheet of fillo down on the buttered sheet. and follow it with a quick but gentle bBrush of withthe melted butter and continue to layer in the same manner, alternating fillo dough and butter, until you’ve used 6 sheets of fillo dough for the bottom layer. Then evenly distribute the cheese mixture filling to cover the fillo dough entirely.
Add your top layers of fillo as you did before, laying down the dough and brushing each layer with butter. You will need 7 sheets of fillo for the top layer. With a butter knife tuck the edges and corners neatly and brush with butter.
Precut the cheesepie into 9 squares before baking
Bake in the oven for 45 min or until golden brown.
